Canadian Athletes Train At St. Kitts – Nevis’ New Stadium

Interest in using the new Silver Jubilee Athletics Stadium for professional track and field purposes is already being indicated, and one of the Federation’s athletics stars, New Towner Desi Williams, is among the first to hit the tracks at Bird Rock, St. Kitts.

Desi Williams, a three-time Olympian representing his adopted country, Canada, and head of his own track club, “Elite Edge,” has brought seven athletes to the Federation for a two-week training camp at the new athletics stadium. Williams described the facility as, “world-class,” and said the facility would help the seven athletes improve performances, especially at this time of the year. He said he was very pleased to be able to bring the athletes here, providing them with a different perspective during their training, and it is made possible by having the new facility.

Williams, a Canadian-qualified track and field coach for the past five years, and also a coach of the Toronto Argonauts Football Club for the past three years, told SKNIS that he was willing to have local athletes join the training sessions to be held twice per day over the next two weeks. The president of the St. Kitts and Nevis Amateur Athletics Association, Mr. Raphael Jenkins, has confirmed that a group of local athletes is being organized to join the camp.

The new Silver Jubilee Athletics Stadium was the venue of the recently concluded 37th Edition of the CARIFTA Games.

Sweet Potato Casserole - Hilltop Restaurant, Nevis

Sweet Potato Casserole – Hilltop Restaurant, Nevis

Ingredients:

6 Medium sweet potatoes
1/2 Cup grated coconut
2 Tablespoons butter
1/2 Tablespoon freshly ground black pepper
1/4 Cup whole milk
1/8 Cup orange juice
1 Tablespoon Lime zest
2 Eggs
 
Cooking Method:

Wash and peel sweet potato and boil until tender. Drain, then mash in a bowl combine the other ingredients adding only 1/4 cup of coconut. Grease casserole dish and pour mixture into it. Using a spatula spread a bit of butter over the top and sprinkle the 1/4 cup of coconut on it.
 
Place in a pre-heated oven 350°C and bake until firm and top is light brown.

Optional but nice, add walnut halves or pieces for the last 10 minutes of baking
