St. Kitts – Nevis Murder Toll Rises For 2008

Basseterre, St. Kitts – Nevis
November 30, 2008 

Two persons are confirmed dead, four seriously wounded, two sustained minor injuries following an attack by masked gunmen  on bystanders outside Henry’s Night Spot in Cayon at about 3:20 am on Nov. 30th 2008.

Conch Salad - Caribbean Recipe

Conch Salad Recipe – Nevis Style

Ingredients:

4 large conchs cut into cubes
1 cup diced celery
1 cup diced green pepper
1 cup diced onion
1 cup diced ripe tomatoes
1/3 cup freshly squeezed lime juice
1/3 cup freshly squeezed lemon juice
1 Head Bibb Lettuce
Cooking Method:

Wash the conch in cold water, cut into cubes, place into a large serving bowl and sprinkle with the salt.
Combine the lime and lemon juices together in a small dish. Crush the hot peppers into the juices; pour over the conch adding the diced vegetables and mix gently.  Adjust seasonings to taste. Spoon into salad cups or place on a bed of bibb lettuce

Serves 8 as an appetizer

Turkey Roti Recips

Turkey Roti Recipe – West Indian Style

West Indian Turkey Roti Recipe

Ingredients:

Turkey Curry for the roti filling

1.5 pounds cooked turkey
1 tablespoons vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
1.5 tablespoons curry powder
1 teaspoon garam masala
1 teaspoon paprika
1 cups water
salt and pepper to taste
Cooking Method:

Chicken Curry (filling): Cut turkey into bite-sized pieces. In hot oil, saute onions and garlic until tender, add curry powder. Add turkey pieces, salt, pepper, chili powder and paprika: fry on medium heat for 10-15 minutes. Add 1 cups of water, bring to a boil, then simmer, covered, for about 20 minutes or until turkey is tender. Serve wrapped in a warm Roti.
