Ingredients:
4 large conchs cut into cubes
1 cup diced celery
1 cup diced green pepper
1 cup diced onion
1 cup diced ripe tomatoes
1/3 cup freshly squeezed lime juice
1/3 cup freshly squeezed lemon juice
1 Head Bibb Lettuce Cooking Method:
Wash the conch in cold water, cut into cubes, place into a large serving bowl and sprinkle with the salt.
Combine the lime and lemon juices together in a small dish. Crush the hot peppers into the juices; pour over the conch adding the diced vegetables and mix gently. Adjust seasonings to taste. Spoon into salad cups or place on a bed of bibb lettuce
1.5 pounds cooked turkey
1 tablespoons vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
1.5 tablespoons curry powder
1 teaspoon garam masala
1 teaspoon paprika
1 cups water
salt and pepper to taste Cooking Method:
Chicken Curry (filling): Cut turkey into bite-sized pieces. In hot oil, saute onions and garlic until tender, add curry powder. Add turkey pieces, salt, pepper, chili powder and paprika: fry on medium heat for 10-15 minutes. Add 1 cups of water, bring to a boil, then simmer, covered, for about 20 minutes or until turkey is tender. Serve wrapped in a warm Roti.
